Maple taffy is actually maple syrup concentrated to 83° Brix. It has a texture similar to honey, and is an ingredient of choice for food processors because of its higher density than maple syrup. This product, also known as "tire sur neige", comes from Quebec folklore, when it is traditionally poured hot over snow and then wrapped around a stick to make a delicious lollipop. It's also a perfect topping for ice cream, yogurt or cakes. Since pure maple taffy crystallizes within minutes, we offer it with enzyme or glucose to maintain its stability. Maple jelly is made from maple syrup to which a gelling agent is added to obtain a texture perfect for spreading on a sandwich, a piece of cheese or a terrine. Finally, maple caramel is made by heating maple syrup to maple taffy level and adding other ingredients such as condensed milk or coconut cream, glucose and corn syrup until a thick, creamy consistency is obtained. It is often used as a topping for desserts, pancakes, ice cream, or even as an ingredient in sweet recipes.
